Apricot, bacon & sausage skewers

An easy yet impressive dish that gives a contemporary twist on the traditional Christmas trimming

Method

  1. Run a knife along the length of the bacon rashers so they stretch a little, spread lightly with the mustard, then cut in half. Use the bacon to wrap a sausage and apricot together, then spear onto short skewers with bay leaves, allowing 2 rolls per person. Roast skewers in the oven with the turkey for 30-40 mins until golden. Serve on the platter alongside the turkey.

    These were fabulous and as I am the only one who likes fruit with meat I am able to indulge.Hadnt thougt of serving them as part of a buffet, will do that next time.

    I couldn't follow this recipe to the letter as I had to make do with what I had/could get hold of. I used normal bacon and chopped up regular sausages instead of cocktail ones. I didn't have port so soaked the apricots in sherry and I couldn't find any fresh bay leaves - but still these were delicious andI would make again!
