Method

  1. Heat oven to 240C/fan 220C/gas 9. Brush a 4-hole Yorkshire pudding tray with oil, then place a sausage in each mould. Brown the sausages all over in the tray over a high heat for 5 mins. Meanwhile, tip the flour into a large bowl, season and make a well in the centre. Whisk the milk, mustard and egg together, then pour a third of the mix into the well. Gradually draw the flour into the milk to form a paste, then whisk in the rest of the milk to make a smooth batter.
  2. Cut the sausages in half with a pair of kitchen scissors, scatter the apple slices between the sausages, then pour the batter over. Take off the heat, then bake for 20 mins until risen, crisp and golden. Serve with mashed potato, peas and gravy.

Using a hot tray

For perfect Yorkshire puddings, you need to make sure the tray is really hot before you pour in the batter. This is what really helps the puddings to puff up nicely.

    This was ok, but I haven't found any half fat sausages which can compete with good butcher's own. To me this means, sadly, that the healthy option is the dull option.

    The apple really added interest to this classic dish. I added some fresh thyme to the batter and served wtih roasted garlic mash and red wine gravy which was lovely!

    Mmm, we liked this one a lot! I put a splash of beer into the batter mix and it made it all light and fluffy. We had it with cheesy sweet potato mash, veg and onion gravy.

    Used onion wedges instead of apple and turned out great :-) Made them with two sausages (all we had) and served with gravy and peas. I'll use more mustard next time but it was a simple, tasty dinner - would recommend.

    This was so simple, delicious & easy!! Precooked the sausages earlier in the day as short of time so just assembled the dish & 20mins in the oven & my 3 & 2yr old were happy bunnies!! My husband & I ate later & we had 2 leftover to freeze!! (did a double batch which made 8 muffin tin size ones! - used 6 good quality sausages! ;)
