Must-make moussaka

Method

  1. Heat the grill to high. Brown the beef in a deep ovenproof frying pan over a high heat for 5 mins. Meanwhile, prick the aubergine with a fork, then microwave on High for 3-5 mins until soft. Mix the yogurt, egg and parmesan together, then add a little seasoning.
  2. Stir the tomatoes, purée and potatoes in with the beef with some seasoning and heat through. Smooth the surface of the beef mixture with the back of a spoon, then slice the cooked aubergine and arrange on top. Pour the yogurt mixture over the aubergines, smooth out evenly, then grill until the topping has set and turned golden.

Making it perfect

Softening the aubergine in the microwave cuts down the amount of oil that's usually soaked up when frying the aubergine for this dish. Remember to prick holes in it first so that it doesn't explode!

    Hmm, nothing special and not the best recipe for Moussaka. Okay for a mid-week dinner though.

    This is not, by any stretch of the imagination, moussaka. However, it's quite tasty and quick mid-week meal. Will definitely make it again but not under the guise of moussaka.

    To make it less oily I slice my aubergines and steam them for about 5 minutes.

    Wonderful recipe! I had no idea you could microwave aubergines! I used to hate preparing them with salt, draining them then frying them - they seem to absorb so much oil. So microwaving them was a revelation to me. Everybody loved this and it is so quick and easy compared with the usual oven-baked version, it's now been added to our midweek repertoire. Love it!

    Cooked this for my boyfriend, and he said it was one of the best things I've ever cooked! I added mushrooms, garlic, cinnamon, green beans, oregano and used passata sauce. I also did two layers of aubergine rather than just one. Will be cooking again very soon!

    Excellent recipe. Did as Efi suggested and cooked the aubergine in the oven, also added 1/2 teaspoon of cinnamon and oregano to mince mixture. Finished in oven at 170oc for 20 minutes and served with the Greek salad on website and pitta bread to mop up juices. First time making moussaka, but will be making again. As there is only 2 of us had it reheated next day, flavour even better.
