Ingredients

  • 500g pack lean minced beef
  • 1 large aubergine
  • 150g pot 0% Greek yogurt
  • 1 egg, beaten
  • 3 tbsp parmesan, finely grated
  • 400g can chopped tomatoes with garlic and herbs
  • 4 tbsp sun-dried tomato purée
  • 400g leftover boiled potatoes (or 350g/12oz uncooked weight boiled)

Method

  1. Heat the grill to high. Brown the beef in a deep ovenproof frying pan over a high heat for 5 mins. Meanwhile, prick the aubergine with a fork, then microwave on High for 3-5 mins until soft. Mix the yogurt, egg and parmesan together, then add a little seasoning.
  2. Stir the tomatoes, purée and potatoes in with the beef with some seasoning and heat through. Smooth the surface of the beef mixture with the back of a spoon, then slice the cooked aubergine and arrange on top. Pour the yogurt mixture over the aubergines, smooth out evenly, then grill until the topping has set and turned golden.

This might not be an authentic Moussaka .. but (with a few little tweaks!) it's a deliciously easy meal .. I rubbed my Aubergine slices in a tiny amount of Olive Oil and placed them on a baking tray in the oven for 20 mins while I made the mince mixture. I used lamb mince out of a preference for flavour in this recipe, and I fried off chopped onions and minced garlic as I browned the meat. I also added double the amount of parmesan suggested, to the sauce. I then put it altogether as suggested in the recipe and then popped in the oven for 30 mins. Yum, yum, yum. I do love feeding my family. More so, I do love feeding my family BBC Good Food meals!! Thank you!

How is this a recipe?
"Add seasoning?" What seasoning? Cumin? Thyme? Cayenne pepper, cardamom and curry?
This is more of an idea than a recipe.
I should post a recipe for lasagna: cook meat, tomatoes and onions on the stove, put this, cheese and some plates in a pan and bake at some temperature. Oh yeah, and add some spices.

Yummy with crusty bread. Used plain chopped tomatoes and added my own herbs and some cinnamon.

Added cinnamon and roasted the aubergines and it was very nice indeed. Will be making again, baby loved it too!

Excellent recipe. Did as Efi suggested and cooked the aubergine in the oven, also added 1/2 teaspoon of cinnamon and oregano to mince mixture. Finished in oven at 170oc for 20 minutes and served with the Greek salad on website and pitta bread to mop up juices. First time making moussaka, but will be making again. As there is only 2 of us had it reheated next day, flavour even better.

Cooked this for my boyfriend, and he said it was one of the best things I've ever cooked! I added mushrooms, garlic, cinnamon, green beans, oregano and used passata sauce. I also did two layers of aubergine rather than just one. Will be cooking again very soon!

Better with lamb and try adding some cinnamon. Very quick and easy.

Loved this recipe. I used natural yoghurt instead of Greek yoghurt.

Wonderful recipe! I had no idea you could microwave aubergines! I used to hate preparing them with salt, draining them then frying them - they seem to absorb so much oil. So microwaving them was a revelation to me. Everybody loved this and it is so quick and easy compared with the usual oven-baked version, it's now been added to our midweek repertoire. Love it!

To make it less oily I slice my aubergines and steam them for about 5 minutes.

This is not, by any stretch of the imagination, moussaka. However, it's quite tasty and quick mid-week meal. Will definitely make it again but not under the guise of moussaka.

Hmm, nothing special and not the best recipe for Moussaka. Okay for a mid-week dinner though.

This was great-thought it might be a bit heavy with potatoes o choppe up a small pack of butternut squash , nuked it in the microwave in a partially covered bowl with a tblspn of water and added it to the mince and tomatoes mix-our two year old wolfed down two portions!

I Made this for our supper today. Very easy and tasty... did make a couple of tweeks............ I followed the advice of earlier comments and griddled the aubergines on a cast iron griddle first.
I also added a chopped onion, 2 cloves of garlic,oregano(used plain tomatoes), tspn cinamon and salt and black pepper. Made it on the hob in a metal casserole and finshed it in the oven as i was baking and the oven was hot. This came out better than one i made for a dinner party!!

Great moussaka recipe. I sliced the potatoes and layered them too. And I added a bit of feta cheese. If you don't like aubergine, you could just use slices of potato.

Not sure what i did wrong. My white sauce was quite sour tasting and seemed to curdle. Any tips would be appreciated.
