Sticky chicken with mango couscous

Method

  1. Heat the grill to high. Peel and dice the mango, toss with most of the spring onions, and the cumin and rice vinegar, then set aside. Put the couscous in a large heatproof bowl, pour over 400ml boiling water, then cover with cling film and set aside.
  2. Mix together the marmalade and mustard. Lay the chicken strips in a roasting tin, then brush over half of the marmalade glaze. Grill for 4-5 mins, then turn the chicken over and brush with the remaining glaze. Grill for a further 4-5 mins until the chicken is cooked through and the glaze is bubbling. The couscous should then be ready. Stir in the mango mixture and serve with the hot chicken strips and the remaining spring onions sprinkled over.

Swapping the chicken...

Swap the marmalade for 3 tbsp clear honey and drizzle it over 8 good-quality chipolatas on a baking tray. Grill for 10 mins, turning occasionally, until the sausages are browned and sticky. Serve with the mango couscous as before.

Using veg stock

Use boiling vegetable stock instead of water to cook your couscous. This will give your couscous lots of flavour even before you add any other ingredients.

    So quick and yet tasty. Used cranberry compote instead of marmelade once, which worked fine as well. Didnt have rice vinegar, so I used lemon-flavoured vinegar, tasted nice.

    Made the dish for family meal. General concensus was that the sticky chicken was great and we all agreed that we would have that again very soon. The couscous wasn't such a success tastewise. I think it may have been the balsamic vinegar that we weren't too keen on, so I might make it again but without the vinegar and see if that is better received. Mozza

    Made it for friends - they were amazed by mango pieces and taste of meat (well, I used vegetarian corn instead of meat) and we totally enjoyed it. Although I found that less vinegar would be better.

    I liked this dish, but I think I'll pop in the BBQ next time. It got way too soggy and wet in the oven. I liked the flavors and it was a good, light meal. My boyfriend did not love it though, apparently he does not like mango..

    nope, not for me, neither i nor b/f liked this - tasted worse second time we cooked it so consigned to the bin - too sickly, yet without flavour - mango was overpowering.
