Method

  1. Grate the courgettes on the coarse side of your grater.
  2. Toss them with the olive oil, lemon or lime juice, clear honey, poppy seeds and the crushed garlic clove. Add salt and pepper to taste. Serve as soon as possible (or it will get too watery), with sizzling barbecued chicken or lamb, kebabs or burgers.

My guests liked it, thankfully, but I wasn't impressed. It went watery very quickly, which gave it a terribly soggy texture, and the honey flavour wasn't very pleasant.

A great way of using up all my courgettes this year that went a little mad in the garden! It went down a treat with everyone!

I have made this many times and people are always surprised at how good it is. My husband is not a fan of courgettes but loves this.
Try it.

Sorry, but my family didn't like this at all. You were right to point out that it goes watery - it did within minutes of making and consequently looked most unappetising. We also found the honey was overpowering and made it sickly-sweet.

Lovely. My daughter does not like courgettes at all but liked the salad. My husband finished it, so I will not have any leftovers for my lunch tomorrow. I will definitely make it again.

Very enjoyable and easy and quick to make. Will certainly make it more often.

Normally my husband would not choose courgettes but he is now a convert. I did not change anything.
