Method

  1. Dip sticks of courgettes in milk, then coat lightly in seasoned plain flour.
  2. Deep fry in very hot olive oil (a wok is ideal for this) for 2-3 minutes until golden and crispy. Drain and serve with grilled, chargrilled or panfried fish or steaks.

    I am vegan so I substitute milk with soya milk, or any veggie milk. Also when recipes need egg I use a vegan egg substitute. For parmesan I buy vegan Parmezano. I would like to see more specifically identified Vegan recipes. That is, no meat or dairy.

    Aubergines are also very nice in this way I usually make thin pancake butter for them with some spices... Serve it with chips and at least two dips..garlic lemon mayo and ketchup mixed with sweet mustard....lovely!
