Ingredients

  • 1 tbsp sunflower oil;
  • 2 tsp mild curry paste (patak korma sauce)
  • 2 large chicken breast cut into pieces
  • 2 medium sweet potatos cut into bit size pieces
  • 4 tbsp red lentils
  • 300ml/1/2pt chicken stock
  • 400g coconut milk
  • 175g/6oz frozen peas

Method

  • STEP 1
    heat oil in pan stir in curry pastefry for 1 min.Add chicken,sweet potato and lentils stir to coat,then pour in stock coconut milk then simmer for 15 mins
  • STEP 2
    tip in peas,bring back to the boil simmer for 5 mins serve with noodles or rice
