Warm stuffed avocados

Method

  1. Heat grill to hot. Halve the avocados and discard the stones. Brush each half with ½ tsp of the olive oil and arrange on a baking sheet. Grill for 5 mins.
  2. In a small bowl, toss together all of the remaining ingredients. Season to taste, then divide between the hollows of each avocado. Serve immediately.

    I didn't use olives or capers as I'm not a big fan of either, but it still tasted delicious! Especially loved the unusual combination of flavours and will definitly make it again.

  • 2 large ripe avocados
  • 3 tbsp olive oil
  • 1 plum tomato , deseeded and chopped
  • 4 sundried tomatoes in oil, drained and chopped
  • 50g pitted black olives , quartered
  • 2 spring onions , finely sliced on the diagonal
  • 1 tbsp capers
  • 1 tbsp each freshly squeezed oranges , lemon and lime juice
  • 1 tbsp cider vinegar
  • 2 tsp caster sugar
  • 2 large fresh torn basil leaves
