Ingredients

  • 4 large leeks
  • 8 large potatoes/12 new potatoes
  • 3 carrots
  • 100g cheese (grated)

for the Crust

  • 200g Brown bread
  • 3-4 cloves garlic
  • 2 medium/1 large onion
  • Fresh or dried mint to taste

Method

  • STEP 1
    Slice potatoes and carrots to desired thickness and bring to boil until par cooked
  • STEP 2
    Drain potatoes and carrots and pour into a oven proof dish
  • STEP 3
    Roughly slice leeks and wash to remove any dirt, then add to the dish
  • STEP 4
    Grate cheese over top
  • STEP 5
    For the crust all ingredients can be put into a food processor until a fine crumb and Spread crumb over the rest of the ingredients and bake at 150c for 1 hour
