leek and potato crust bake

Ingredients
- 4 large leeks
- 8 large potatoes/12 new potatoes
- 3 carrots
- 100g cheese (grated)
for the Crust
- 200g Brown bread
- 3-4 cloves garlic
- 2 medium/1 large onion
- Fresh or dried mint to taste
Method
- STEP 1Slice potatoes and carrots to desired thickness and bring to boil until par cooked
- STEP 2Drain potatoes and carrots and pour into a oven proof dish
- STEP 3Roughly slice leeks and wash to remove any dirt, then add to the dish
- STEP 4Grate cheese over top
- STEP 5For the crust all ingredients can be put into a food processor until a fine crumb and Spread crumb over the rest of the ingredients and bake at 150c for 1 hour
