Spinach with pine nuts & garlic

Method

  1. Wash the spinach thoroughly and cram into a large pan. Pour over a little boiling water, cover tightly and cook for 2-3 mins, until the leaves have wilted.
  2. Tip into a colander and drain well. Use the side of a small plate to press the spinach down to extract the last of the water. If using frozen, defrost in the microwave and drain.
  3. Meanwhile heat the oil, add the pine nuts and fry until golden. Add the garlic and fry briefly, then stir in the spinach and stir until heated through. Season and serve in a warm side dish.

This treatment also works well with green beans (cook for 5-6 mins) or broccoli florets (cook for 3-4 mins).

    I cooked this with the Slow Cooked leg of lamb with red wine and onions recipe, it worked really well, although i would fry the onion for a few mins (rather than briefly) just because i like my garlic to be slightly more cooked.

    Yummy, a really nutritious and tasty side dish. I didn't have any pine nuts so used some chopped up almonds instead.

    Absolutely perfect. I halved the recipe and it came out perfectly. The golden pine nuts add a lovely nuttiness to the spinach and garlic. Would definitely make this again.
