  • sunflower oil, for greasing
  • 85g pack sage & onion stuffing mix
  • 1 beef stock cube
  • 8 rashers smoked streaky bacon
  • 500g pack beef mince (avoid very cheap packs; use one with less than 20% fat)

Method

  1. Heat oven to 180C/160C fan/gas 4 and oil the inside of a 900g loaf tin. Tip the stuffing mix into a bowl, crumble in the stock cube and pour over 300ml boiling water. Give it a good stir, then set aside.
  2. Stretch the bacon rashers a little by running the back of a spoon along their length, then use 6-7 to line the base and longest sides of the tin. Chop the rest.
  3. Mix the chopped bacon and mince into the stuffing with some black pepper, then press into the bacon-lined tin and bake for 40 mins until firm. Turn out and serve sliced.

It was just ok. I probably would not make this again it needed something else an cant put my finger on it. My partner suggested mushrooms and some spice. Took about 90 mins to cook and bacon wasnt crisp and it didnt hold its shape when turned out. disappointing.

LOVED IT!!! Made this the other night for the family, (husband is american, so he knows his meatloaf) & it was a great success!! I took on board other reviewers comments and so used only 3/4 of a oxo cube to reduce the saltyness of the flavour. Definitely a recipe i will cook again!!

Made this not expecting much since recipes I find tend to turn out badly but it was amazing. OH loves it so it must be amazing. Can't wait to have it in sandwiches tomorrow!

Made this last night. The taste and texture was good and it held together well. Not the most attractive dish but it's meatloaf, what can you expect. The only thing I would change is to leave out the stock cube, it was a little too salty for our family.

Maximum taste, minimum effort. Brilliant recipe, whole family enjoyed it. The leftovers taste even better!

Loved it, except was still not cooked after 90 minutes. Had to spread it out on a tray eventually to cook. The bacon doesn't crisp up if left in tin either.
Next time I will use half the amount of bacon, dice it all in the mixture and shape into burgers to cook.

My partner works nights so we always have tea really late at night, I gave this a try and wow, all for under £5 too! this is a bargin (and also helps seeing we've just moved house so moneys on the rashion :D), plus two meals in one awesome!!

Made this for the first time today and it was excellent. My wife enjoyed it so much she asked if she could have more, that is a compliment in itself.
Great recipe and so easy.

Very quick and easy. I added garlic and a shake of ground cumin and cinnamon. Also put a layer of cooked mushrooms in the middle of loaf. Loved by all the family.

I was disappointed with how this recipe turned out. It was easy to make and quite tasty, but it didn't hold its shape once turned out of the tin so ended up like a pile of mush on our plates. I also found the stuffing flavour overpowered everything else and made it a bit stodgy. Probably wouldn't bother with this recipe again.

We really enjoyed this easy to make meatloaf. I used turkey mince, and we enjoyed it hot with veg and gravy, and then cold in our sandwiches the next day. Economical and very tasty.

really enjoyed this quick easy meatloaf, I layered some sliced mushrooms in the middle and we loved it. will try with some cooked sliced peppers next time.

Have made this several times now, the whole family enjoyed it , served with new potatoes veg and gravy, also great cold, used pancetta in the mince mixture instead of chopped bacon .

Hubby liked this but as a non-meat eater, I didn't think it looked too appetising. A very quick meal to put together though. Served with jacket potatoes, tomatoes, carrots and peas.
