Method

  1. Boil the carrots for 4 mins or until just tender, then drain well. Mix together the olive oil, coriander and lemon juice in a large bowl or serving dish, then toss with the carrots. Season to taste. Serve hot or warm with lamb, chicken or fish.

Know-how

To cook carrots in the microwave, put them in a microwave-proof dish, pour in 100ml water then cover with cling film. Pierce cling film then microwave on High for 8 mins, until just tender.

    What a terrific side dish! So easy to do, and so tasty. I boiled some small Charlotte potatoes and used the dressing on those too. Delicious!
