Sausages with sticky onion gravy

Method

  1. Fry sausages for 15 mins or until browned, then remove from pan and keep warm. Heat onions in same pan, then add flour, stirring for 1 min. Add thyme, then gradually add stock. Bring to boil then simmer for 5 mins until smooth. Add Worcestershire sauce, season and serve with sausages.
  2. For the onions: Makes 600g, which is 3 batches. Prep time 5 mins, cook time 30 mins. Melt the butter in a large, deep frying pan and stir through the onions. Cover with a lid and cook gently for about 10 mins, until softened. Remove lid, add sugar, then cook 15-20 mins, stirring, until all of the liquid has evaporated and onions have turned golden. Divide into 3 batches to make the recipes, right. Will keep in the fridge for up to 5 days, or freeze for up to 1 month.

Know-how

When onions are fried gently, they release natural sugars. These sugars caramelise, giving sticky softened onions their characteristic sweet flavour. Adding a teaspoon of sugar speeds up this process. If the onions fry too quickly or over a high heat, they may start to burn; a splash of water can help to prevent this.

    This is good, but i am vegetarian and every onion gravy recipe i see has Beef stock, so i replaced the onions with red ones, replaced the stock with veggie stock and red wine. Its like a mixture between a onion gravy and a red wine sauce. Its really good! But i like the process of getting the onions really sweet and sticky. :)

    This variation on plain bangers and mash was a big hit - after trying the onion sauce we all agreed we preferred it to standard gravy. As our sausages were chicken based we used chicken stock which worked fine. I would say it's hard to go wrong with this recipe!

    A really good dish to have, i also am a vegetarian so i used vegi sausages, veg stock and then kept the rest the same and it tasted great. Also did the meat version for my partner who loved it!! Will be making this again for sure.

    I really enjoyed this meal, but I couldn't quite give it five stars because I felt like the gravy could have done with a bit more flavour. Like crazycat I think the recipe is incorrect - 12 onions fills a huge pan and one teaspoon of sugar didn't do much!! I think it probably should be one tablespoon. In addition I served the recipe with cooked broccoli and cabbage, which I realised made it far too vegetabley because of the onions in the gravy too. I might have bumped the rating up to 5 stars if there has been potatoes included in the recipe.

    Very good. Served it with mustard mash. I just made enough for one meal for two people and used half an onion and a 'sprinkle' of sugar... but I suspect a tsp of sugar for 12 onions would be far too little...

    Really good but I alter the onion part of the recipe - for 2 people I do 2 large onions (we like 'em), a tsp of sugar and a knob maybe 20g of butter, and follow from there. So nice with the mustard mash - makes comfort food that's very flavourful.

    Great one! Absolutely yummy!!! I´ve used muscovado instead of ordinary sugar and it was great and much more stickier and darker :-) I´ve served it with a garlic mash potatoes as a veggie main ..

    thanks for the muscavado tip :) i cooked this as i went along and it has gone down a treat. we are a family of four (2 young children) so i felt that 5 onions would suffice. we had this with cheesy mash and cumberland sausages and will certainly be making this again.
