Method

  1. Layer all the ingredients in a 1 litre glass or plastic preserving jar in the order the ingredients are listed.
  2. Write the following method on a gift label: 'Tip the contents of the jar into a large mixing bowl. Make a well in the centre and add 2 beaten eggs, 300ml/½pt milk and 100g/4oz melted butter. Mix quickly and lightly to a soft batter. Divide between 12 muffin cases. Bake at 190C/fan 170C/gas 5 for 18-20 mins. Use within 4 weeks.' Attach the label and a wooden spoon to the top of the jar with some raffia or coloured ribbon.

    Just made these muffins. Great recipe, they turned out so good they looked shop bought! The mixture I found made far too much for 12 muffin cases (I had enough to fill an additional 10 mini muffin cases and 2 small ramekins!). I used a mixture of pecan and walnuts and added ground ginger (I had no all spice) and they were fine. I think next time however, I would reduce ingredients by half to fill 12 cases.

    I made about 8 of these to give as gifts. I made them first to try them and they were delicious. They make a great gift and everyone loved them, they even sent me picture texts when they had made them! Great idea, I will use it again this year.

    P.S I could not get tropical fruit mix so I used normal mixed fruit and added dried cranberries to make them ideal for christmas.

    Loved the idea of giving the dry ingredients as a gift for christmas but thought I'd try making the muffins first. Total thumbs up from this family. Personally I would add a bit more of the cinnamon and mixed spice, but still lovely. Might try them again with a bit of apple as well. Definately favourite for us though.
