Fish with peas & lettuce

Method

  1. Mix together the lettuce, spring onions and peas in a microwave-proof dish. Drizzle with olive oil. Sit fish fillet on top, spoon over crème fraîche, then season. Cover with cling film, then pierce film.
  2. Microwave on Medium for 6-8 mins until the fish is cooked. Lift fish off the lettuce, then give lettuce and peas a good stir. Spoon lettuce mix and sauce onto a plate, then sit fish on top.

It's often cheaper to buy meat, chicken and fish in larger packs, so divide it into portions and freeze for another time.

Keep it fresh

If you decide to buy larger canned goods, make sure that you transfer the remaining contents to a plastic container and use within a few days.

Think ahead

Plan your meals so that you can recycle your leftovers, for instance cook extra boiled potatoes one night and use them in a frittata the next day.

    I made this in desperation as I happened to have all these ingredients in the fridge and I needed something quick and easy. I also threw in some sliced courgette. It was suprisingly good and I will definitely add it to my midweek, quick and easy repertoire!

    This was a excellent dish. I really loved and and it was so quick and easy. I subsituted soured cream instead of creme fraiche but it still worked really really well.

    I used finnaly choped leeks which were sweated off and peas were added with the creme fresh and coley loin layed on top and cooked for a further 5mins with the lidd on,excellent.

    Didn't microwave.Vegetable mix was gorgeous.Served with wedges so that I could convince my guy it was very posh fish & chips !

    This is a perfect dish for when I don't know when my husband's going to be home - just get it prepared and when he's in stick it in the microwave. He likes it too!

    Great recipe, I put a little veg bouillon in with the crème fraîche which works well. I usually serve it with rice or cous cous both of which work well.

    This is yum, and so easy. I covered in foil and ovenbaked instead of microwaving and it was fine. Bear in mind the lettuce gives off lots of water so there's lots of runny sauce at the end - perfect with mash.

    Basically nice, but with all the water in the bottom of the bowl I thought that the fish was going to start swimming. Quite bland, though
