Chocolate brownie cake

Method

  1. Heat oven to 180C/fan 160C/gas 4. Butter a 20-25cm cake tin and line with greaseproof paper.
  2. Place 175g/6oz of the chocolate, plus the butter and sugar in a heavy-based pan and heat gently until melted, stirring occasionally. Leave to cool.
  3. Whisk the egg yolks into the chocolate mixture, then add the flour, nuts and the remaining chocolate.
  4. Whisk the egg whites until they form soft peaks, then gently, but thoroughly, fold into the chocolate mixture.
  5. Pour into the prepared tin and bake in the centre of the oven for about 35-40 mins until crusty on top. Leave to cool, then run a knife around the sides and remove from the tin. Dust with icing sugar and serve warm with custard or ice cream or cold with cream.

    My scales weren't working so my measurements were approximated, however this turned out pretty good considering. I left it in for almost an hour but it still didn't seem to be cooked through, so I pulled it out of the oven to allow it to cool with the thought of mashing it with ice cream as per someone elses suggestion. By the time it cooled it was actually perfect brownie - crisp on the outside and a bit chewy and gooey on the inside. We warmed it back up and served with vanilla ice cream. I'll definitely make this again once I've got new scales!

    Made this as a birthday cake for my friend. It went down a treat and was even easy to decorate with icing. Dont think it lasted longer than 10 minutes with 6 girls around.

    i made this the other week and it was fantastic! went down a real treat. I substituted the pecans for Marshmallows, they completely dissolved to make it more sticky and gooey! its one of those cakes you leave sitting out as everyone just helps themselves!

    I cooked this with gluten free flour for a friend, added an extra egg and reduced the flour (as gluten free flour is more absorbant) by 20 grams and cooked for 45 mins - which was actually a little too long. Was sponge like and not quite as gooey as i'd hoped, but i probably just need to practice with the adjustments. Is best served warmed and with ice cream.

    did this as a birthdau cake, used extra chunks of chocolate instead of pecans and topped with chocolate butter icing! it went down very well with everyone. would make this again!

    very good, i used white choc instead of the nuts. Not quite as good as Nigella Lawson's recipe and slightly more fussy than it too, but nevertheless very tasty and indulgent.
