Ingredients

For the Tuna:

  • 2 tuna steaks
  • 1 tin chopped tomatoes
  • 1tbsp extra virgin olive oil
  • 2 tomatoes diced
  • 1 onion
  • 2 tbsp parsley
  • 2 tbsp basil
  • 2 tbsp lemon juice
  • 100g button mushrooms sliced

To Serve:

  • 150g Cous Cous
  • 3 tbsp lemon juice
  • 400g seasonal veg

Method

  • STEP 1
    Heat oil in the pan and add onions, mushrooms and tinned tomatoes.
  • STEP 2
    Add tuna steak, tomatoes, lemon juice and spices and fry for 3-4 minutes each side of the steak
  • STEP 3
    Meanwhile, prepare veg and cous cous.
  • STEP 4
    Mix lemon juice in with Cous Cous
  • STEP 5
    Serve
