Succulent tuna steak in a tomato and parsley marinade served with lemon cous cous

  • For the Tuna:
  • 2 tuna steaks
  • 1 tin chopped tomatoes
  • 1tbsp extra virgin olive oil
  • 2 tomatoes diced
  • 1 onion
  • 2 tbsp parsley
  • 2 tbsp basil
  • 2 tbsp lemon juice
  • 100g button mushrooms sliced
  • To Serve:
  • 150g Cous Cous
  • 3 tbsp lemon juice
  • 400g seasonal veg


    1. Heat oil in the pan and add onions, mushrooms and tinned tomatoes.
    2. Add tuna steak, tomatoes, lemon juice and spices and fry for 3-4 minutes each side of the steak
    3. Meanwhile, prepare veg and cous cous.
    4. Mix lemon juice in with Cous Cous
    5. Serve

Simple, yet nutritiously delicious!
Tuna steaks are always a treat, and the lovely light lemon-tomato marinade in this recipe gives the dish a mediteranean freshness that blends beautifully with the cous cous.
The trickiest part of this recipe is getting the tuna steak to a perfect 'medium-rare'; be cautious of frying time in relation to the type of pan and strength of heat your stove uses.
