Method

  1. To make the sugar syrup put the water and caster sugar in a pan over a low flame for about 10 minutes until the sugar has dissolved. Cool completely.
  2. Steep the tea bags in the gin for 10 minutes. Strain and put in a cocktail shaker on top of the ice cubes. Pour in the lemon juice and 120ml of syrup. Shake it up for a good few minutes (really shake it up!). Pour into 2 cocktail glasses (or little French Duralex glasses), and rub the edge of the glass with a lemon wedge.

This was lovely - I varied the quantities, as 80ml of gin per person seemed like a lot! However, the flavour of the earl grey was very nice and my friends were super impressed!

Absolutely fantastic, sophisticated and totally delicious, not to mention good and strong. Gents don't seem to like it as much as ladies do though, my brother said it made him feel sick but then he hates gin.

Does this really only make 2? seems rather a lot of tea bags and lemon for 2 drinks!
