Teriyaki chicken meatballs with rice & greens

Method

  1. Heat oven to 200C/180C fan/gas 6. Pulse the shallots and carrot in a food processor until finely chopped. Add the chicken, lemon zest and some seasoning, and pulse again until mixed. Using oiled hands, shape into small meatballs. Put on a baking tray lined with baking parchment and bake for 10 mins until browned and cooked through.
  2. Meanwhile, boil the rice following pack instructions, adding the spring greens for the final 4 mins. Drain well.
  3. Add the mirin, soy, lemon juice and sugar to a saucepan. Bring to the boil, then simmer until saucy. Remove from the heat, add the meatballs to the pan and roll them around in the sauce. Divide the rice and greens between plates or bowls and spoon the meatballs over.

    Mmmm . . . really tasty! I cooked this twice over the Christmas/New Year period and everyone in the family really enjoyed this recipe. The second time I made the chicken balls, I added a small piece of finely chopped ginger, and served them with stir-fry noodles + peppers for a change.

    Added chilli as suggested by rebecca. My family really liked this meal although the sauce was a little too sweet for me. Will try adding some fresh ginger next time and reducing the amount of sugar.

    I added ginger and garlic, used turkey instead of chicken and seared the meatballs before putting them in the oven, but they taste fantastic and are so easy to make.

    Not a hit in our house. Didn't like the texture of the chicken balls and a bit bland. Sauce was ok, could use with other meats or fish. Wouldn't make the chicken balls again.

    This one didn't work for me. The chicken was very dry and the cooking time wasn't correct. The sauce refused to become 'saucy', and unfortunately the finished result was extremely bland.     Really tasty, can see why the texture might not agree with everyone though and would be tempted to add chillies next time. Also only added two spoons of sugar but was still very sweet, may try a little less next time. Nice and quick to make as well.

    We really enjoyed this recipe, tasted great, I will say though now we are confident with the recipe I would be happy to add more to the chicken ball is like some chilli, ginger, garlic etc to give a bit more flavour, also not sure bout cookies the spring greens in with the rice, think I would rather do them separately just out of choice.

    I made the meatballs which held together really well but served with noodles and stir fry veg with a chilli sauce instead of the mirin sauce from the recipe. Really tasty and colourful.

    sooo good! I used only 1 spoon of sugar and 100gr of rice as i cooked for me and my boyfriend. the meatball were just fine for 2 with the whole 500gr. I've also added garlic and chilli for a little kick. will make again

    A friend tried this recipe first and thought it was bland. I added some garlic, chilli and grated ginger and this pepped it up. Cannot really score it higher than 3, given how much I altered the recipe

    Liked the spring greens in the rice and flavour added by the sauce, but the meatballs were not a major hit here. The texture gets a bit weird, and our kids did not like it. If not making it for kids i would clearly spice up the meatballs significantly. Not sure if i will make it again considering how many other wonderful recipes there are.
