Sweet jacket potato with piri-piri prawns

Treat yourself to a special solo supper of spiced shellfish, sweet red peppers and paprika mayonnaise on a baked potato

Method

  1. Heat oven to 200C/180C fan/gas 6. Put the sweet potato on a baking tray, rub all over with a little of the oil and season with salt. Bake for 45 mins until really soft.
  2. Meanwhile, heat the remaining oil in a frying pan. Add the garlic and pepper and cook for 2 mins, making sure the garlic doesn't burn. Add the chilli flakes, half the paprika, the vinegar, ketchup, 1 tbsp water and prawns to the pan, then bubble for 2 mins until the prawns are cooked through. Stir through the parsley, saving a little to sprinkle over at the end.
  3. Mix the remaining paprika into the mayonnaise. Once the potato is cooked, split it down the centre, pile in the prawn mixture and dollop the paprika mayo on top. Scatter over the remaining parsley and serve.

    Made this for all the family. I cooked the prawns in two batches omitting the chilli in one to keep the children happy. Happy people all round - I will definitely be making again.

    Really liked this. I doubled the quantities for two and it worked well. I had to go out and buy sweet paprika but this was worthwhile as it gave the dish a smokey flavour very similar to a prawn cocktail. To save time, I zapped the potatoes in the microwave for 5 mins before transferring to the oven, but otherwise followed the recipe to the letter. I served on a bed of salad leaves. Recommended.

    As some others have done, I made this for two by doubling quantities. Really simple recipe, I put the potatoes in the microwave for about 5mins before sticking them in the oven. Great when you don't have long after work!

    Wonderful! Will definitely make again. Next time I'll start the sweet potatoes in the microwave ....they took ages in the oven! I used smoked paprika and would definitely use again for nice smoky flavour. I used cooked king prawns and just heated through at the end.

    Lovely, quick and easy! Perfect for when you want something light and tasty! I used creme fraiche instead of mayonnaise, only because i'm not a massive fan of mayo!!

    Loved this! Made double for a dinner with my boyfriend and we both scraped the plates clean. Swapped red wine vinegar for malt vinegar as that was all we had, and only used half as much but came out lovely. Will be making again soon!
