Stir-fry prawns with peppers & spinach

This is a brilliant speedy supper for two. Pick up the ingredients on your way home

Method

  1. Heat a wok until you can feel a good heat rising. Add 2 tbsp oil and, a few secs later, the garlic slices. Stir-fry until they start to turn golden, then using a slotted spoon, spoon onto kitchen paper to drain.
  2. Toss in the pepper and stir-fry for 1 min or so until softened, then scoop out and set aside. Add the remaining tbsp oil. Heat, then toss in the prawns and stir-fry for another 2-3 mins until cooked and beginning to brown. Add the soy or fish sauce.
  3. Throw in the spinach and stir-fry until it begins to wilt. Return the peppers and crisp garlic to the wok, then serve immediately.

    For a fairly simple dish this was really nice. You can get away with only 2 tablespoons of oil - less fat. I added some straight to wok noodles for a complete meal.

    I cooked this for supper & found it to be very tasty and quick, but next time I may add either a small amount of chilli or ginger to it just for a change. Would reccomend it though. Also very good for those of us trying to loose weight

    This recipe is delicious, far more so than I had expected. It sounds as though it should be quite bland but it turned out to be very tasty and great with noodles. I followed the recipe amounts but used prawns which were already cooked and normal spinach instead of baby (as that's all I had). I also ground some chilli flakes over the prawns as they were cooking and this gave the meal a nice kick. Will definitely make this again - fast, simple and yummy!

    Deme has a lovey idea of also adding some ginger or chilli. I like the sound of this, i think i would fry thinly sliced ginger and chilli together with the garlic and then flollow the recipe as its written. I also like the idea of adding straight to wok noodles so i will do this and instead of just the soy sauce i will mix the 2 tablespoons of soy as suggested above with 1 tablespoon of chinese 5 spice. Nice and quick but extremly tasty aswell..

    Fab - have cooked it many times. Very quick and easy. Have added chiili and ginger for a different variety of tastes. Also chilli flavoured straight to wok noodles work well with this dish.
