Method

  1. Heat oven to 200C/fan 180C/gas 6. Fry the bacon pieces in an ovenproof pan or casserole dish for 3-5 mins until golden and crisp. Stir in the onion and butter and cook for 3-4 mins until soft. Tip in the rice and mix well until coated. Pour over the wine if using and cook for 2 mins until absorbed.

  2. Add the cherry tomatoes and the hot stock, then give the rice a quick stir. Cover with a tightly fitting lid and bake for 18 mins until just cooked. Stir through most of the Parmesan and serve sprinkled with the remainder.

Love the no stir element. I added some chorizo in with the bacon, and grated and diced courgette (attempt to get veg into self, hubby and kids). Great to adapt and more veg / other meat whilst knowing that the baking method really works. Hubby who "doesn't like risotto" had seconds and thirds!

Absolutely delicious! I made this last night for my partner and I and will definitely be making it on a regular basis. As we are both following the Slimming World diet I did not add any butter, oil or wine and it was still creamy and yummy. I softened the onion in a little water for 4 minutes in the microwave. I could also have used Frylight if I had wanted. I added mushrooms and peas and next time may use chicken in place of the bacon or as well as - it would still be perfect for Slimming World. The only Syn value in the whole recipe was a negligible amount from the stock cube. It tasted like a full fat restaurant dish and, yes, we ate it all!!

Wouldn't adapt this recipe as its very tasty as it is, altho I have made this a few times and just stick in whatever ive got in the fridge! Loved by all the family including a 6,5 and 3 year old.

Like most people, this just didn't cook in 25mins in the oven. After leaving it in for 40 mins and seeing it was still under-cooked, I put in on the stove for another 10 mins to finish it off. I added crushed chillies, garlic and at the very end stirred in a couple tablespoons of low-fat cream cheese. That really did the trick! The cream-cheese made it much tastier and gave it a slight creamy kick. Can't rate this higher than 2 as the recipe needs a lot of adapting and just doesn't cook as quick as it said.
