Lemon & raspberry baskets

With just five ingredients, this is a great little pud to have up your sleeve when you’re in a hurry

Method

  1. Melt the chocolate in the microwave for 2 mins on High, stirring halfway through. Meanwhile, stir together the lemon curd and the crème fraîche.
  2. Divide half the raspberries between the baskets, spoon over the lemon cream and top with the rest of the berries. Drizzle the dark chocolate over the tops of the baskets and leave in the fridge to set for 5-10 mins or up to 1 hr.

You can find brandy snap baskets in the biscuit section of most supermarkets. If you find some are broken when you open the pack, just lightly crush the rest and layer up in serving glasses with the raspberries and spoonfuls of lemony cream.

    Very quick and easy - but looks really impressive! Great for impressing friends when you don't have much time - guaranteed to get compliments. I forgot to pop it back in the fridge but still tasted delicious.

    These were incredibly easy and looked impressive and my guests loved them but i thought they were a bit too sweet, i'd reduce the amount of lemon curd slightly next time

    Delicious. I made my own brandy snaps using the Mary Berry recipe on here, really quick & easy. I also used 300g of creme fraiche to 225g of lemon curd and added some lemon zest to the mixture as the original was a touch too sweet for my taste

    Made this for supper last night and it is so light and tasted lovely. Had to make my own brandy snap baskets as I live in France and could not buy them, but it was not difficult. I made everything ready just to assemble before eating, will definitely be making this again.

    Great quick desert to impress. I would definitely advise less lemon curd, I would stir in a tbs of lemon curd into the creme fresh at a time and adjust according to taste. I had lots of broken baskets unfortunately, I am welcome to more ideas on how to use them up!!
