Lemon & raspberry baskets

With just five ingredients, this is a great little pud to have up your sleeve when you’re in a hurry

Method

  1. Melt the chocolate in the microwave for 2 mins on High, stirring halfway through. Meanwhile, stir together the lemon curd and the crème fraîche.
  2. Divide half the raspberries between the baskets, spoon over the lemon cream and top with the rest of the berries. Drizzle the dark chocolate over the tops of the baskets and leave in the fridge to set for 5-10 mins or up to 1 hr.

You can find brandy snap baskets in the biscuit section of most supermarkets. If you find some are broken when you open the pack, just lightly crush the rest and layer up in serving glasses with the raspberries and spoonfuls of lemony cream.

    Easy recipe very tasty .Put the mixture into ramekin dishes and crumbled the brandy baskets on top easier to eat .Guests were impressed

    Hello, my family loved this recipe although i used strawberrys instead of raspberrys, has i couldn't get none at the supermarket. But went down better then expected. great idea so quick and absoulately divine to eat. will be doing this again.

    I used this recipe last saturday when some friends came round for dinner. It looked impressive (although it had only taken me 5 - 10 mins to put them together) and was a tasty end to a meal.

    Very quick and easy to make, especially to prepare in advance. Insead of the brandy snap baskets, I crumbled chocloate muffins into little dessert dishes then put the raspberries and mixture on top...delicious and enjoyed by all!!!

    This was super quick to make and yet looks impressive. The ratio of lemon curd to creme fraiche meant that the mixture was a bit too tangy for me and also a bit too sweet. So I added more creme fraiche to tone it down. Next time I will tone it down even more. The baskets do go soggy after a while so best eaten a max of a couple of hours after they've been made (as Swager says!). I had some raspberries and melted chocolate left over, so served with the raspberries dipped in chocolate on the side. Given that this takes no time at all and looks good, it deserves 5 stars!

    Made this last night and was absolutely gorgeous. My guests were very impressed! Exceptinally easy to make. Changed raspberry's for strawberry's and crumbled a flake over the top. only used a quarter of lemon curd aswell. love love love it!!!!!!

    I made these a couple of nights ago with white chocolate instead of dark, and they were really tasty - not too heavy for after a big main meal either. Is the lemon curd mixture meant to set? I left mine in the fridge for about an hour and the mixture was still soft when I took them out - or does the recipe just mean that the chocolate is meant to set? Delicious anyway!

    Excellent and really easy. I used the Extra-Zesty Lemon Curd from Waitrose and I think an ordinary lemon curd would need be improved by adding the zest of fresh lemon. I used the quantities above and made eight full baskets. I didn't need 50g of chocolate - 25g would do and it's important to keep the little zig zags of chocolate quite fine and just for decoration as a sudden blob of chocolate doesn't taste right with the delicate lemony creamy taste. Will definitely be giving it to dinner guests from now on and the family loved it too.

    The second time I made these, I used orange curd instead of lemon. Equally brilliant result! Blueberries work well instead of raspberries and make a nice colour contrast.

    My friends were impressed, they loved it and could not believe I made it myself. However, mixing all of the créme fraiche with the lemon curd gives you far to much of the filling for 6 brandy baskets.

    I made these for a dinner for my friends and it went down so well they all asked for the recipe. I have also used it for cheesecake style dish. Crush some ginger biscuit or digestives and place in a glass then layer the cream mixture and raspberries on top. Grate the chocolate on top if using

    This was a fantastic dish! Quick and easy but looks very impressive. I left out the chocolate and I'm really glad I did. I thought the lemon and the raspberries made it refreshing and tangy.
