Lemon & raspberry baskets

With just five ingredients, this is a great little pud to have up your sleeve when you’re in a hurry

Method

  1. Melt the chocolate in the microwave for 2 mins on High, stirring halfway through. Meanwhile, stir together the lemon curd and the crème fraîche.
  2. Divide half the raspberries between the baskets, spoon over the lemon cream and top with the rest of the berries. Drizzle the dark chocolate over the tops of the baskets and leave in the fridge to set for 5-10 mins or up to 1 hr.

You can find brandy snap baskets in the biscuit section of most supermarkets. If you find some are broken when you open the pack, just lightly crush the rest and layer up in serving glasses with the raspberries and spoonfuls of lemony cream.

    These were fantastic, quick and simple to make yet looked like something bought from a patisserie and plates were scraped clean! Had the left over ones (made 9 using ingredients listed) next day and obviously the baskets had started to go soggy so should not to be made more than a couple of hours before serving.

    Here in denmark the brand snap baskets are v hard to find but you can get choc-lined ice cream cone baskets instead which are perfect for this. I added blueberries along with the raspberries - really tasty! They are so quick & easy to make, the end result looks disproportionately professional!

    I made these last night for a dinner party. Couldn't get hold of brandy snap baskets so crushed ginger biscuits in the bottoms of small glasses and put the other ingredients on top. Really delicious and got lots of compliments! Possibly the easiest dessrt I've ever made and low fat! Will definitely make again though would add more creme fraiche next time- 200g doesn't make much when using glasses. Also only put 3 tsp lemon curd in.

    Made these twice to much admiration from guests. I've also frozen the lemon curd mix in individual portions to add to the baskets at the last minute and these are even classier.

    We were not keen on these, they are very simple to make. But we just thought they were too sweet. Maybe we got a measurement wrong somewhere, but was different to how we thought they would be.

    Very simple and easy to make. Baskets are tricky to find outside of the festive season. I don't like taste of creme fraiche too much on its own but mixed with lemon curd it's fab! Don't be tempted to put too much chocolate on top, it's impossible to eat after 1 hour in the fridge!
