Grilled Sardines & Olives

Method

  1. Make two cuts on each side of the sardines. Season with salt and pepper.
  2. Place the olive oil, lemon juice, garlic and rosemary in a shallow dish and mix together.
  3. Place the sardines in the marinade, cover and chill for 3 hours, turning frequently to ensure fish is well coated.
  4. Cook under a pre-heated moderate grill for 5-6 minutes, turning once. Serve garnished with sliced stuffed olives and lemon wedges

  • 50g (2oz) Opie's Cocktail Olives stuffed with pimiento (sliced)
  • 8 fresh sardines (cleaned)
  • 60ml (4 tablespoons) olive oil
  • 30ml (2 tablespoons) lemon juice
  • 1 clove garlic
  • salt and pepper
  • 1 lemon (cut into 8 wedges) and fresh rosemary
