Coconut ice squares

This recipe was re-tested and updated on 05 April 2011. It now uses 250g of sweetened condensed milk and works beautifully.

Method

  1. Using a wooden spoon, mix together the condensed milk and icing sugar in a large bowl. It will get very stiff. Work the coconut into the mix until it's well combined - use your hands, if you like.
  2. Split the mix into two and knead a very small amount of food colouring into one half. Dust a board with icing sugar, then shape each half into a smooth rectangle and place one on top of the other. Roll with a rolling pin, re-shaping with your hands every couple of rolls, until you have a rectangle of two-tone coconut ice about 3cm thick.
  3. Transfer to a plate or board and leave uncovered for at least 3 hrs or ideally overnight to set. Cut into squares with a sharp knife and pack into bags or boxes. These will keep for up to a month at least, if stored in an airtight container.

    after reading the other comments i was concerned about the amount of liquid to use. i just went by eye and it turned out well.

    This is kind of an ''okay'' recipe. But I also had the problem of sticking the two parts together. But I made it into two colors and served separately... After that it was good... :)

    Hi I made this recipe this morning with my son using the same ingredients advised.It turned out perfect was really easy to put together & it taste great.It was our first time making coconut ice,we are now planning to make these delights for the school fete coming up on the 9th July.

    Hi I made this recipe and my family loved it. But the second time round I made it a little different. I used 340g icing sugar, 340g dessicated coconut 400g condensed milk. I made one batch plain white and a second batch by weighing out the cond. milk and mixing in the colouring first. When finished I pressed out the two mixes to about the same size making sure the top of each mix did not come into contact with any icing sugar, flipped one on top of the other and rolled out to size ready for cutting. This may look really long winded but the finished result means lots more "diet freindly"? coconut squares.

    I used 200g of coconut, 200g of sweetened condensed milk and 250g of icing sugar and it was perfect, it was moist enough to stick together and tastes amazing :-) will make this again for sure.

    Recipe was really easy to follow, sticking the two colours together was a bit fiddly though as they kind of blended into each other too much! But once cut you can tell them apart. Taste very yummy too!

    I am making this recipe out of 101 delicious gifts, which still shows 50g of condensed milk instead of the new version 250g, so when the book gets reprinted you need to edit this recipe or add a note some how! But the 250g version works a treat. cheers buzzybee.

    Added roughly 50% extra of everything so that i used up the whole tin of milk and it was fab. 400g condensed milk, 400g icing sugar and 300g coconut. Easy to make with a very helpful 3 year old. TIPS............. I stuck it in the fridge overnight before cutting. Also I split the ingredients at the start and added the colouring to the con milk so that it gave a more even pink colour.
