Turkey in a cinnamon and coriander sauce with an Onion and Parsley Sweet Potato Mash

Ingredients

  • For the turkey & sauce:
  • 250g diced turkey
  • 1 tbsp extra virgin olive oil
  • 2 cloves of garlic
  • 1/2 large onion
  • 2 tsp cinnamon
  • 1 tsp dried coriander
  • 2 tbsp fresh coriander
  • 50g button mushrooms
  • 300ml chicken stock
  • 200ml tinned tomatoes
  • 100g chickpeas
  • handful of flaked almonds
  • For the mash:
  • 1 large white fleshed sweet potato
  • 50ml skimmed milk
  • 1/2 large onion
  • 2 tsp dried parsley

Method

    1. Heat oil in the pan. Chop garlic and onion and fry with turkey and spices for 10 minutes.
    2. Add mushrooms, tinned tomatoes, chicken stock and chickpeas to the pan and simmer for 15 minutes
    3. Meanwhile, peel and chop sweet potato and place in saucepan with boiling water. Add onions.
    4. Cook on medium-heat for 10 minutes. Drain water from pan, add milk and parsley and mash
    5. Serve mash and turkey. Garnish with flaked almonds

What I love most about this dish is the natural sweetness created with the caramalized onions, cinnamon, and crunchy chickpeas. Of course the sweet potato just compliments these flavors beautifully, acting only to enhance them instead of washing them out like some mashes can do.
The flaked almonds are a value-added touch, and although the apricots (seen in the photo) are not specifically listed in the recip, I personally found them a delightful addition and highly recommend adding them in!

Turkey can often run the risk of being a bit dry, but this marinade and delicate cooking method prevents this from happening.
A winning dish!
