- Place the spinach and watercress in a large salad bowl
- Cut each fig into six segments and add
- Tear and add the mozzarella
- Tear and add the parma ham
- Cut the pear into slivers and add
- Dress with the oil, vinegar, honey and seasoning

- 4 fresh ripe figs
- 2 large handfuls of baby spinach and watercress
- 125g buffalo mozzarella
- 4-6 slices of parma ham
- 1 ripe pear *optional
- 2 tbsp extra virgin olive oil
- 2 tbsp white balsamic vinegar
- 1 tbsp acacia honey
- A little salt and black pepper
