Ingredients

  • 1 rasher lean back bacon
  • 1 thinly sliced garlic clove
  • 1 tbsp wine vinegar
  • 2-3 tbsp canned chickpeas, drained and washed
  • ½ bag baby leaf spinach

Method

  1. Cut the bacon rasher into shreds and cook in a hot non-stick pan with the garlic clove. Stir in the wine vinegar and chickpeas. Toss in the baby leaf spinach, stirring until wilted. Season if you want to, then serve hot.

I wanted to use spinach from my garden. I substituted haloumi for the bacon to make a vegetarian version. I took on board the comments re the blandness, I have a jar of tikka masala paste so just added a tablespoon of that. My husband and I both loved it.

This was SO nice!! Found the recipe whilst looking for ways to use up small amount of chickpeas I had left over, had everything I needed in the fridge, and was so tasty! Will definately be making again!
I used smoked bacon... (extra tasty) and served with some couscous.

Having read the reviews, I thought I'd 'spice it up' a bit, so fried with sesame seed oil, added 2 tomatoes, 2 rashers of smoked bacon, a few mushrooms and some lemon juice at the end (the iron from spinach doesn't get absorbed by your body if the chemicals found in lemon juice aren't combined with it). Salt and pepper to boot - job done, great meal!

Added a bit more bacon, and also some paprika (smoked and regular) and cayenne pepper. Delicious.

We really enjoyed this & it got my toddler eating chickpeas for the first time It was good served cold the next day as well.

I found this slightly bland and that is after adding 2 rashers of bacon not one. However this gets 4 stars from me as it's still more exciting than your average sandwich, was extremely quick to make and appears to be very healthy.
It's also the perfect combination of left overs I often have, so I will make this again. (perhaps will add a boiled egg)

I also added a small amount of chilli flakes for an extra kick and a nice bit of colour. Great little snack in the time it takes to make a sandwich : )

Usually these recipes are always good but unfortunately this one didn't have much going for it. Will probably not make again as it was rather bland and uninspiring.

My Brother made me this in spain one evening but without the spinach. It was the best evening snack!!! Much better and healthier! It contains 10 times less fat than in a standard bag of crisps!

YUM,great padded out with more slad leaves for a very health and tasty lunch.I used smoked bacon for more flavour.
