Grilled pesto tomatoes on toast

It’s colourful, full of flavour and low in fat – it could be the perfect quick snack

Method

  1. Halve the tomatoes. Thin the pesto sauce with a little water and brush half on the tomatoes. Cook under a hot grill for 5-7 mins until softened. At the same time, toast the slice of bread, then spread with the remaining pesto mix. Top with the hot tomatoes, squashing them slightly.

    i eat this a lot! especially when i've just bought a new loaf of granary bread. it's super easy to make, fills you up and is affordable (good if you're on a student budget like me).

    I have just made this for supper and it was very yummy. I put slices of mozzarella on top & plenty of black pepper. A really warming, quick and inexpensive supper dish. I shall definitely make this again.

    I turned this into a sandwich for lunch. I put several grape tomatoes on a baking sheet and drizzled them with olive oil,and a little salt and pepper.Put them in a moderate oven until they started to burst open. Remove. I toasted two slices of my favorite bread and spread it with my pesto. I arranged the tomatoes on one slice along with a slice of my favorite cheese and topped with other slice of bread. This with a small garden salad made a great lunch.
