Egg free,dairy free ginger cake

  • 125g treacle
  • 125g golden syrup
  • 125g dairy free butter
  • 125g brown sugar
  • 275g plain flour
  • half tsp baking soda
  • 1tsp ginger
  • 150ml dairy free milk


    1. preheat oven gas 2/150
    2. line square18cm tin
    3. put treacle,golden syrup+margarine in a pot heat gently till melted
    4. sieve flour,baking soda+ginger in a large bowl make a well in the centre and pour in milk and treacle mix, beat well till smooth
    5. pour into tin and bake for an hour, cool in tin for one hour+turn on to wire rack. when cool wrap in greaseproof paper for 2 days

I warmed slightly for a minute in the microwave and served with vanilla ice cream it was fab
