  • 8 slices pancetta
  • 2cm-thick slice white bread, cut into 8 chunky soldiers
  • splash olive oil
  • 850ml-1 litre butternut squash & sage soup soup (see 'goes well with')
  • drizzle cream and a few snipped chives, to serve

Method

  1. Heat oven to 220C/200C fan/gas 7. Wrap a pancetta slice around each soldier. Toss with a little olive oil and bake for 5-8 mins until crisp, turning halfway through cooking.
  2. Reheat the soup, then divide evenly between 8 espresso cups or large shot glasses. Serve drizzled with cream and sprinkled with chives, with a crispy pancetta soldier for dipping.

This soup looks delicious but not a good idea as a canape - small fiddly cups of hot liquid combined with crumbly dippers spell disaster for silk ties and delicate party kit. Stick to bowls on tables, is my advice.

Family staying for several days over Christmas, made the soup in advance so I wouldn't be cooking the whole time and served as a lunch after Christmas. The flavours of the soup and the pancetta soliders went really well together. Will certainly be making this again.

I will be doing this, i was already doing the butternut soup but LOVE the Pancetta wrap idea and to put in cups I was worried about having to much of the soup as a starter but this idea is fantastic and more festive!

This looks like the perfect recipe however the link for the main soup recipe is not shoing in the 'goes well with' as detailed and I can't seem to find it if I search for it either. Can anyone help?!
