Method

  1. Heat the oven to 200C/fan 180C/gas 6. Mix the flour mix, lemon zest and juice, egg mix and melted butter together.
  2. Divide between 12 muffin cases and bake for 20-25 minutes until golden and risen. Cool. Top with the lemon cream.

    These were very easy and yummy - they did have quite a dense texture, but not dry - so no necessarily a bad thing. My topping didn't look as pretty as the picture though!

    These are ab delicious ! I make them at least once a week. My neighbours have taken to 'popping' in as I am decorating my gorgeous lemon cakes. I adore most things Lemony ! I wish there were more stars.

    I followed the recipe exactly and found the cake to be disappointingly dry. The topping was superb. I made three other cup cake recipes at the same time for my daughter's 30th. The best by far was the carrot cake version, the only one worth a repeat making

    These are magic. I replaced the lemon curd with raspberry jam, used pink colouring and milk instead of lemon juice. They were soft as sweet little pink clouds.

    These are the best lemon cakes I have ever eaten or cooked! I made them in muffin cases but found that they were a little on the large size so next time I'll use smaller cases. I love the texture and they are so light. Real winners

    Was excited to try these, given the mostly positive comments above, but they were terrible. They looked great when they came out of the oven, but were soggy and heavy in the middle. I followed the recipe exactly and don't understand what went wrong. Such a shame, hate wasting ingredients.

    these worked really well. I didn't use cream for the topping as didn't have any! I used basic butter icing and swirled lemon curd through it. Very tasty!

    I made these cakes and followed the recipe and found that they were awful. I bake quite alot and usually it turns out very well. I was very sceptical about the quantity of flour to sugar and fats but went with it. The result was very dissapointing. I've had to bin the lot. Definitely won't be making these again.

    I made these cupcakes for a friend's leaving afternoon tea at work. They went down really well and everyone enjoyed them. The cream didn't look like on the picture but it had a lovely lemony taste.

    Made these for a BBQ............topping was lovely but the cake was extremely heavy. Comments were varied but had a go. Bake regularly so was disappointed with the result. Won't be keeping in my favourites!

  • 2 lemons zested and juiced
  • 2 eggs , beaten with 150ml soured cream and 150g lemon curd
  • 100g butter , melted
  • 300ml double cream , whipped, with 4 tbsp lemon curd stirred in
