Method

  1. Finely slice the onions and chop the red pepper, removing the seeds. Cut the potatoes into roughly ½ cm slices.

  2. Heat a knob of butter in a medium (about 24cm) frying pan over a low heat and cook gently for 10 – 15 until starting to go brown, add the peppers and cook for a further 5 mins.

  3. Put the potatoes in a steamer over boiling water for 10 - 12 mins to soften. If you don’t have a steamer, put in a saucepan, cover with boiling water and simmer gently for around 8 - 10 mins until just cooked through and drain well.

  4. Break the eggs into a jug and beat with a fork, season with a generous grind of pepper and a pinch of salt. Use scissors to snip the chives into small pieces and stir in.

  5. Heat the grill. Add a little more butter to the frying pan and add the potatoes. Pour over the egg mixture. Cook for 15 mins until almost set and golden brown underneath - you can use a fish slice to lift the omelette up and check. Put the frying pan under the grill. Make sure the handle is outside the oven as it will become very hot and can burn. Cook for a further minute or two and serve.

I am a big fan of Spanish food. And I loved this Omelette recipe. This recipe is very easy to cook but also very much delicious.

So what do i do with the finely sliced onions after cooking my butter for 10-15 mins lol :-D. I think method step 2 is wrong!!

That is an omelette, but not a spanish one. In Spain people cook with oil, not butter. They don't boil the potatoes, but cook them slowly in the frying pan, together with the onions. Then, after draining they will mix it with the eggs and to the frying pan again. No grill. Spanish omelette is just onion and potato. True that everybody add other things...but then although may taste better, it is not spanish omelette. Having said all this, i will try this recipe at some point. Sounds good ;-)

Quite nice, easy enough to make. But as others have pointed out, Stage 2 doesn't make much sense?!

This is a really famous recipe in my family, my father makes it with many vegetables. This is like fish Soup, there is not really a recipe for it. In my family, we add many vegetables.

My husband doesn't cook very often and made this the other evening for dinner. He was very proud of the end result. It was huge and really tasty.

I'm going to try it because I think that it is funny, thanks for sharing, but I want also to say you that is not a spanish tortilla, it is not the way to do tortilla in any place of Spain. Believe me, I'm spanish and I know it. Anyway it s original, but I would change the name :)
