Lemon biscuits

These crisp, zesty biscuits work beautifully with the sweet lemon icing

Method

  1. Heat the oven to 180C/fan 160C/gas 4. Whizz the flour and butter to breadcrumbs, add the sugar, lemon zest and egg yolk and process to a dough. Roll the dough to 5mm thick and cut out biscuits. Put on a buttered baking sheet and cook for 15-20 minutes. Cool.
  2. Sift the icing sugar into a bowl and mix with enough of the lemon juice to make a runny icing. Drizzle the lemon icing over the biscuits.

    Hmm, 2 egg yolks & 325g flour and 125 g sugar - my mixture did not form into a dough, so I ended up adding the egg whites in to bind the mixture...Also 200g icing sugar for 30 biscuits? The ratios really need refining in this recipe a little further...but they are yum!

    These are really nice and quick to make. I usually bake cakes, and this is my first try at biscuits but these are lovely and really crisp and crumbly. It does take a while to mix the cold butter into the flour and the dough is very short and crumbly and has to be patted together carefully but that must be what makes them so crisp and not doughy!
