Lemon biscuits

These crisp, zesty biscuits work beautifully with the sweet lemon icing

Method

  1. Heat the oven to 180C/fan 160C/gas 4. Whizz the flour and butter to breadcrumbs, add the sugar, lemon zest and egg yolk and process to a dough. Roll the dough to 5mm thick and cut out biscuits. Put on a buttered baking sheet and cook for 15-20 minutes. Cool.
  2. Sift the icing sugar into a bowl and mix with enough of the lemon juice to make a runny icing. Drizzle the lemon icing over the biscuits.

    My 9 year old son made these. They were easy to make, the short list of ingriedents was good and they tasted delicious. Even my citrus hating daughter liked them. He said next time he'd like to try making them with lime or orange.

    easy to make but the biscuit tasted a bit disappointing. rolling out the dough very thinly makes them crisp up a bit better - i found mine a bit doughy. icing was delicious!

    I'm a bit new to all of this, and I get the part about whizzing the flour and butter but when it says 'process' in the other ingredients what does this actually mean and would a whisk do the job? Thanks for your help!

    These are great, so easy to make...I keep them without icing in an airtight box for up to a week, and just make up a little icing using bottled lemon juice when I want some.

    Wanted to bake something but didn't have lots in the cupboard so thought I'd try these. Very simple, reslly tasty! The icing recipe was a little bit thick, but actually turned out well when applied.

    I left out the lemon and put in 1 tablespoon of vanilla extract. Then iced them with milk chocolate. They worked really well and tasted lovely.

    Excellent recipe! Quick and easy to make.. At first the dough was a bit crumbly but i added a litte bit more of flour and then pressed with my hands until the dough was all one big ball. For the icing though i suggest using only 100 g of icing sugar. x

    Nice and quick, and tasty too. I didn't make the icing thick enough to start, so you do need to use all the icing sugar in this recipe. I didn't manage to drizzle the icing very well either, so mine didn't look at pretty as the picture!! :-)
