Baked swede mash with sage & parmesan crumbs
Crush your root vegetables with garlic, herbs and a touch of hot cayenne and roast with a crispy breadcrumb topping

- Boil the swede and garlic in salted water for about 15-20 minutes or until tender. Drain well then mash with half the butter and the cream, a pinch of cayenne and plenty of seasoning. Spoon into a baking dish.
- Heat the oven to 200C/fan 180C/gas 6. Mix the breadcrumbs with the parmesan and some black pepper. Melt the remaining butter and fry the sage leaves until they crisp up, then crumble them into the breadcrumb mix. Sprinkle the mix all over the surface, spoon on any melted butter and bake for 40 minutes or until the top is crisp and golden. Serve with roasts or sausages.
