Date & apple squares

A chewy, oaty tray bake with sticky dates and apples - bound to be a big hit.

Method

  1. Heat oven to 190C/170C fan/gas 5. Grease an 18cm square tin and line with baking parchment.
  2. Tip the apples into a pan with 2 tbsp water. Bring to the boil and simmer on a low heat for 5 mins until tender and slightly pulpy. Add the dates and 50g of the sugar, and cook for a further 5 mins. Take off the heat and break the apples down with the back of a spoon until smooth and well mixed with the dates. Set aside.
  3. Gently melt the butter in a saucepan. Mix the flour, bicarb, oats and remaining sugar in a bowl. Pour in the melted butter and stir well until oats are coated.
  4. Press half the mixture firmly into the tin, spread the apple mix on top and smooth over. Cover with the remaining oat mixture and press down. Bake for 30-35 mins until golden and firm. Cool in the tin before cutting into squares.

    I made these squares as the recipe seemed quick and easy and I love dates! They didnt take long to make at all and the results are absolutely delicious! I didnt have an 18cm tin so I used a 20cm tin and i was glad as it rose to the top. They are moist and very buttery. I took some to work and the comments were outstanding. I shall certainly be making these on a regular basis!

    Just tasted one of these (made by my lovely mum) -- they are so delicious! With buttery crumble and sticky toffee dates, enhancing a straightforward apple traybake ; they're like three desserts in one. Highly recommended (especially if you can get someone else to bake them for you!) But I will certainly be having a go myself, too.

    These look and sound delicious... but dates are very sweet and 10oz of soft brown sugar as well as the dates sounds scary! Am wondering if they'd work with only half the sugar?

    They were so good, but yes, very sweet. Half the sugar would have been just right. I doubled the amount and it bake in the same time. Very good for pot luck Easter Lunch.
