Chilli burger with roasted tomatoes & red onion relish

Method

  1. Heat oven to 200C/fan 180C/ gas 6. Mix the beef with the chilli and some chopped coriander, then season well. Shape into four patties about 2.5cm thick. Chill until needed.
  2. Keeping the tomatoes on the vine, put them in a roasting tin. Drizzle over 1 tbsp of olive oil and season. Roast for 12-15 mins until just soft.
  3. Heat 1 tbsp of oil in a non-stick frying pan. Then cook burgers on each side for 4 mins for rare or 5 mins for medium. For the relish, mix 2 tbsp of olive oil, the lime juice and sweet chilli sauce, parsley, coriander leaves and red onion. To serve, place a burger on a muffin half, add a branch of tomatoes and top with red onion relish.

    We really enjoyed this recipe - apparently it was easy to cook (my husband did the 'hard' work!) and the result was delicious. We do like spicy food though and despite adding double the fresh chilli, this still wasn't spicy enough so next time we'll add more.

    I agree about need for slightly more 'kick' in terms of chilli. But the relish was surprisingly good..

    Agree with the extra chilli.. I added about 4 small bird's eyes. Added tobasco and worcester sauces to the mince which was nice. Relish is pefect and the roasted tomatoes go brilliantly with it. I added double the coriander to the burgers.

    I also agree with the need for a little more kick. The relish is fantastic but personally I don't think that the roasted tomatoes are worth the effort as they don't really add anything to the dish.

    Wasn't that hot but it was nice. All my tomatoes had fallen off their vines so I halved them and roasted them cut side up.
