Method

  1. Pour all the oil from the jar of peppers into a deep frying pan. Heat the oil until bubbling, then tip in the potatoes and onion and toss in the oil. Cook for 5 mins, stirring every now and then until the potatoes are beginning to turn golden.
  2. Carefully pour most of the oil out of the frying pan, leaving behind about 1 tbsp. Tip in the beans and drained peppers, season and stir until well mixed. Lay the fish, skin side down, on top of the vegetables.
  3. Cover the pan and cook over a medium heat for 5 mins more or until the fish flakes easily with a fork and the vegetables are tender. Squeeze the lemon half over the fish and serve with crusty bread to mop up the juices.

    Done this a couple of times now, it's great. Only problem is that I found the potatoes took longer to softner up than the time suggested, the extra time didn't spoil fish though, and it looks fantastic on the plate.

    Straightforward to do and tasty to eat - Will definitely do again. A half glass of dry white or vermouth just after tipping out the oil adds a little extra something too.

    Absolutely delish!! A firm favourite in my house and very healthy. I cook the fish separately in the oven, wrapped in tin foil for 20 minutes though. I cheated last time I made it though - I was short on time so bought a packet of fresh microwavable new potatoes instead and just chopped them up.

    Fabulous. Unfortunately my jar of peppers did not have a lot of oil in, so I had to start with some olive oil. They were however quite spicy, otherwise I might have been tempted to add some chilli. As per a previous comment I did add some white wine and I think this was the right thing to do, to give a little more sauce. I used baby new potatoes, otherwise I would have par boiled. The cod cooked to perfection following the recipe and I will definately make again.

    Yes, quite nice. The cod came very succulent. I used the par cooked potatoes that come in the vegetable aisle of the local supermarket. I wish I had seasoned it, which I think was let it down for me. Will make again as the family really enjoyed it.

    I substituted courgettes for the beans; and as recommended by others, parboiled the potatoes - they have to take more than 5mins to cook! Even the fish took longer than 5mins - approx 7-8mins - but I suppose that depends on the thickness of the fish. Also added a splash of white wine, as suggested above. Very tasty recipe, easy, colourful - what more could you ask for?

    Very tasty. I agree, new potatoes take longer than 5 minutes and although I cut the fish up into smaller pieces it did take longer than 5 mins to cook (about 8) Will make again soon and try with a little white wine.

    cooked this earlier in the week. Lovely, par-boiled the potatoes which saved time, didnt have jar of peppers so used fresh and added some other veggies i found in the fridge, oh and a small amount of chorizo. All in all it was lovely- i did add some moroccan spices to the outside of the fish, which made it a bit crispy. The flavours worked so well.

    Delicious dish. Not usually a big fan of fish, but really enjoyed this. The oil from the peppers gave everything a lovely flavour. Fish took a little longer to cook than recipe suggests. I cooked my potatoes separately and served with tiger bread. A quick, easy dish, would definitely make again.

    Very easy, quick and tasty and went down well. For my taste a trifle too oily despite draining the oil and adding a glug of white wine, as suggested. I followed other reviewers advice and par boiled the potatoes and added some chorizo which goes really well with cod and green beans. Might try with sundried tomatoes next time.

    I've made this with fresh tri-color peppers & little lemon zest - was perfect. This evening I've done it to the recipe and yes - its very oily. Nice enough but i prefer it my way which tastes fresher & is certainly healthier!

    I would make this recipe but as I'm trying to stay healthy, the nutritional information is important and you haven't listed the nutrition correctly. This dish is served with new potatoes however you've listed this dish as having 0g of carbohydrates. I therefore do not trust to make this dish.
