Pork chops with fruity red cabbage

Method

  1. Heat oven to fan 200/fan 180C/gas 6. Put the potato wedges in a large roasting tray and toss in 1 tbsp of the oil. Roast for 10 mins until golden.
  2. Meanwhile, heat the rest of the oil in a wok or large pan and tip in the red cabbage and onion. Stir-fry for 5 mins then stir in the cranberry sauce, apple and 4 tbsp water. Cover with a lid and leave to cook for 10-15 mins, depending on how thinly you shredded the cabbage.
  3. Spread the mustard over the top of the chops and add to the roasting tray. Roast for another 15 mins until the chops are browned and cooked through. Season the cabbage to taste and serve with the mustardy pork chops and potato wedges.

Making it quicker or superhealthy

Instead of red cabbage, shred up Savoy cabbage or winter greens and stir-fry for 2 mins before adding the cranberry sauce and apple. Cook for 3-5 mins until tender. To make it super healthy, trimming the chops of all their excess fat will reduce the amount of saturated fat per portion to 4.5g.

    Really Really tasty. I cooked the wedges with olive oil, paprika and piri piri to add a spicy twist. Garlic bread works as a good side too.

    Just cooked this but served the chops and the slaw with sweet potato mash and green beans, lovely! I grilled the chops for 6 mins each side and all came together well. I would say that you need more that 4 tbls of cranberry, i used the whole jar!

    This was fantastic, so tasty. I over cooked the chops (someone was late back from work!) but the flavours were lovely. I added whole garlic cloves to the wedges. Our favourite was the fruity red cabbage, will make again.

    I just cooked this and LOVED IT!! very easy to prepare as well, another thumbs up from my boyfriend. He usually hates red cabbage and onions on there own, but the combination of flavors he actually shocked me by asking for more :) On the whole brilliant

    Chops were nice with the mustard one, that I will do again but the "fruity" cabbage was not as expected. Mlurh, wont be cooking it again.

    Easy but cabbage wasn't very flavorful. I used three tbls of c'berries. Also cabbage took quit a bit longer to cook

    Overall a good combination and easy to adapt. However, no chance of cooking this in the time suggested. Raw potato wedges need much longer than 10mins. I always use red onion with red cabbage and added a tbsp of balsamic vinegar and a heaped desert spoon of soft brown sugar to the cabbage. Uncover the cabbage once softened to allow some of the liquid to evaporate and flavours to intensify.
