Chunky sausage & tomato pasta

Jazz up sausages with this spicy tomato pasta

Method

  1. Heat the olive oil in a heavy-based pan (preferably not non-stick) and add the sausages. Fry for about 8 mins until golden and cooked through. Tip in the garlic and fry for 1 min. Pour in the white wine and boil until it has reduced by half.
  2. Stir in the tomato purée and tomatoes, and season to taste. Simmer for 15 mins until the sauce is rich and thick.
  3. While the sauce cooks, boil the pasta according to pack instructions and drain. Stir in the basil if using, and cooked pasta into the sauce, then serve in bowls with grated or shaved Parmesan.

Making it veggie or spicy

Use veggie sausages, such as Cauldron Vegetarian Lincolnshire sausages, available from supermarkets. Or to make it spicy, add a pinch of dried chilli or 1 chopped red chilli as you fry the sausages.

    Love this! So quick and easy to make, throw it together with anything that I have in the fridge and needs using! Storecupboard staple that the children wolf down...Can't ask for more than that!

    I made this dish yesterday and used smoked Italian sausage as that was all I had in the fridge. I used red wine and made just enough for two. This made a great mid-week meal and its very versatile. The sauce was quite rich but not enough to spoil the balance. I'll use this recipe again soon but I'll stick to the published recipe just to taste the difference.

    This recipe was a very easy and tasty midweek meal. I added 8 sausages instead of 4 as that was how I bought them in a pack and didn't want to waste them. This quantity was fine. I also added a pinch of dried chilli flakes to give it a kick. If you like a tomato based pasta dish then you should love this.

    Very easy to make . i added a dash of worcestershire sauce and it gave it a bit of a zing and i served it with garlic bread. it was lovely

    Try this recipe with Cumberland sausages! Add some chopped up Italian sausage or maybe Chorizo for a warm, slightly spicy Spanish finish. I have tried both and the results are delicous!

    Really easy to make. Great for after work. I added easy chillis to give it a kick. Personally I think that if you were to feed 4 you would need to use more sausages. But then I do have a meat loving man with a huge appetite!

    I made this with chorizo sausage,and served it with homemade fresh pasta.It was divine!My husband who usally isnt keen on such food said he thoroughly enjoyed it.

    Yes, this has become a staple of the household! Toulouse sausage is brilliant with this, Victoria, and Tesco Finest have a Mediterranean sausage which works really well, what with the little bit of chilli and Med. herbs, Sue! Recently, I innovated - with cumin seeds, but I'll give the fennel seeds a shot, Suzanne! Gr8 dish for these 'austere times' - I can feel a Dickens moment coming...!

    I love this recipe, easy and soooo tasty. Don´t use tomato puree, as I live in Spain and is difficult to buy here, I use tomato frito - yummy!

    A family favourite and easy to make. I add an onion and five minutes before serving I throw in some peas. Like other reviewers I would suggest using sausages with a strong flavour.
