Chunky sausage & tomato pasta

Jazz up sausages with this spicy tomato pasta

Method

  1. Heat the olive oil in a heavy-based pan (preferably not non-stick) and add the sausages. Fry for about 8 mins until golden and cooked through. Tip in the garlic and fry for 1 min. Pour in the white wine and boil until it has reduced by half.
  2. Stir in the tomato purée and tomatoes, and season to taste. Simmer for 15 mins until the sauce is rich and thick.
  3. While the sauce cooks, boil the pasta according to pack instructions and drain. Stir in the basil if using, and cooked pasta into the sauce, then serve in bowls with grated or shaved Parmesan.
Try

Making it veggie or spicy

Use veggie sausages, such as Cauldron Vegetarian Lincolnshire sausages, available from supermarkets. Or to make it spicy, add a pinch of dried chilli or 1 chopped red chilli as you fry the sausages.

    I absolutely love this recipe - I have made variations, by using red wine instead of white, and differents types of pasta - but I have to say that the white wine and rigatoni pasta is perfect for this. I add LOADS of garlic, and try it with different flavoured sausages - don't even try to use cheap sausages as you need the sausages to be really meaty to be able to hold the sauce and not turn into a paste! Perfect finished with sprigs of basil - a firm favourite!

    p.s @ Bexxs - the white wine adds a real depth of flavour - definately would recommend using it - just make sure you reduce it by half as the recipe says

    This is a lovely tasty,quick recipe which is now a firm family favourite. I have used wine as detailed in the recipe but have also used apple juice as an alternative. Might be worth trying for those of you that don't want to use wine and the taste works well-of course-with pork sausages.

    Just made.. Added a red onion some mixed peppers and a piri piri chili from a jar. Yummy will make again. Great base to just add your own preferences for a great quick evening meal

    So good and so so tasty. Made this twice in 2 weeks as was such a big hit. Very easy and quick to make. Used Tesco finest caramelised red onion sausages. Yum yum yum!

    I made the amount of sauce in the recipe but far less pasta as recommended by other people here - 250g. Only had three sausages so added a mini pack of lardons, an onion and 2tsp hot chilli powder and 1tsp smoked paprika. Was really nice with an excellent spicy kick.

    I only added a few mushrooms and half a teaspoon of sugar to the recipe. I would have liked to add some chilli too but the kids wouldn't have eaten it! Next time I would double up on the sausages and add some onions.

    Another winning meal !! I have a fussy family but they all enjoyed this pasta dish and asked for seconds!!- which is a first ! I Stuck to all the suggested ingredients and measurements - however I did use chorizo style sausages from taste the difference range - Sainsbury's- as a few people said that they felt the need to add chilli or cayenne pepper - i felt this would give it the "kick" everyone else said the recipe was lacking and it definitely worked well ;)

    Excellent esp as I used Tesco finest Toulouse sausages n home roasted tomatoes that were in the freezer, excellent on what is a very cold night

    Made this dish for supper. Really tasty. I used sainsburys taste the difference Cumberland sausage and added a few chilli flakes. So easy to make! Next time I will fry the sausage whole and cut up when cooked. This is because the chopped sausage pieces fell apart as they were cooking - still delicious though! The fresh basil works really well.
