Ingredients

  • 1 tbsp olive oil
  • 4 thick pork sausages, cut into bite-sized pieces
  • 2 garlic cloves, crushed
  • 200ml medium white wine
  • 1 tbsp tomato purée
  • 400g can chopped tomatoes
  • 500g pack rigatoni or penne
  • handful basil leaves, torn, (optional)
  • parmesan, to serve

Method

  1. Heat the olive oil in a heavy-based pan (preferably not non-stick) and add the sausages. Fry for about 8 mins until golden and cooked through. Tip in the garlic and fry for 1 min. Pour in the white wine and boil until it has reduced by half.
  2. Stir in the tomato purée and tomatoes, and season to taste. Simmer for 15 mins until the sauce is rich and thick.
  3. While the sauce cooks, boil the pasta according to pack instructions and drain. Stir in the basil if using, and cooked pasta into the sauce, then serve in bowls with grated or shaved Parmesan.

Quick and easy. I didn't have any white wine so I used half sherry, half water. Will make again.

Surprisingly tasty sauce for so few ingrediants. I added a chilli to give it some heat too and it worked perfectly. Will definitely be making this meal again.

Delicious!
I used spicy pork and fennel sausages. I also added quite a bit of pepper, and some tomato soup to the pasta sauce.

Adapted this based on what I had - 400g pasta, lincolnshire sausages and dry pinot wine. Unbelievably tasty. Will definately make this again.

A family favourite and easy to make. I add an onion and five minutes before serving I throw in some peas. Like other reviewers I would suggest using sausages with a strong flavour.

I love this recipe, easy and soooo tasty. Don´t use tomato puree, as I live in Spain and is difficult to buy here, I use tomato frito - yummy!

Quick and easy to make, in the past I've used red instead of white wine which really adds some body. A firm favourite in our house.

This is a Fab recipe and my family really enjoyed it. The only thing I added was a red pepper and next time I may add mushrooms too.
