Ingredients

  • 2 tbsp Korma paste
  • 2 sweet potatoes, peeled and cut into large chunks

  • 400g tin coconut milk
  • 400g tin pineapple chunks

Method

  1. Heat korma paste and toss with sweet potatoes, peeled and cut into large chunks.

  2. Pour in coconut milk and water then cook for about 15 mins or until the sweet potato is tender. Tip in pineapple chunks simmer for 2 mins, then season. Scatter with coriander and serve with naan bread.

Nice enough and couldn't be easier. Definitely benefits from frying some sliced shallots and garlic and adding them to the main dish along with the coconut milk. Don't buy sweet potatoes which are too big and don't make the chunks too big otherwise they can end up undercooked.

Such a simple dish to make. I did add an onion and made my own korma paste. I used fresh pineapple as that is what l had. I was worried that the dish would be overly sweet. It wasn't at all. It was really good and will definitely be made again.

Lovely recipe. I fried an onion first, added 3 tbsp of Madras paste instead of Korma, and like others only used the coconut milk, no water. I also added a bag of raw prawns 3-4 mins from the end, with the pineapple, just to make it more substantial. We loved it, and so easy.

Great recipe. Consider adding more paste and onions as a minimum. I like my sweet potatoes a little softer so adding the water with the paste helps. I finish this with a little double cream swirled in at the end (off the heat) for a little more depth.

This was so tasty... after a few additions, thought it sounded nice but potneially a bit bland so added onion, garlic, fresh chilli, red pepper and red lentils. Delicious!

What a great tasty meal, my daughter cooked this for our family get together, we all loved it! She added onion, pepper, mushrooms, quorn pieces and fresh pineapple, loved the sweet taste which was perfect, just enough. She served with rice, naan bread and poppadums', I can`t wait to try this myself, would definitely recommend.

Very tasty, quick recipe for 2 people. Also omitted to water, added onion, garlic and red pepper alongside 2 1/2 tablespoons of korma paste. Made sure to cut the sweet potato into large but thin chunks and all seemed to cook in 18-20 minutes.

I loved this recipe. So quick and tasty! I omitted the extra water (the coconut milk was enough!) and also added a red pepper and 2tbsp red lentils. The timings were perfect. Will definitely make again soon!

I absolutely loved this one! Like many others I omitted the water as well, and I actually added a little extra korma paste for some extra taste. Served on a naan as suggested and it was amazing. Will deffinately make this again.

Very easy to make, I would not recommend putting in water as its already the nice consistency. Made this for my mum she loved it! Only downside is it was very sweet but if you like that then this is a perfect dish for you!

I added a red pepper and didn't use any water. It was still a bit thin (thin enough to warrant spoons instead of forks), I imagine it will be just right tomorrow. Sweet potatoes did take much longer than stated, too. Despite all that, it was a really easy supper to throw together, and quite tasty too. The pineapple lends a really nice flavour to the usual korma. I would have given it 4 stars if it hadn't been for the inaccuracies in the recipe.

Easy to make, but it was too sweet. It also took much longer for the sweet potato to cook than suggested (I based the size on the recipe picture).

Amazing, I added a red pepper, and I honestly can say this is one of the easiest meals I have ever made.....I make it now at least once a month! Sooooooooooooo Easy!! And the kitchen smells amazing too!!

I used sultanas rather than pineapple and added spinach and a sweet pepper. Big hit with everyone.
