Turkey tortilla pie

Top a chilli con carne with snipped tortilla wraps for this healthy one-pot that fuses nachos with enchiladas

FREEZE cooked mince only

Method

  1. In a deep flameproof casserole dish, cook the onions in the oil for 8 mins until soft. Add the cumin and cook for 1 min more. Stir in the mince and add a bit more oil, if needed. Turn up the heat and cook for 4-6 mins, stirring occasionally, until the mince is browned.
  2. Stir in the chipotle paste, tomatoes and half a can of water, and simmer for 5 mins. Mix in the beans and sweetcorn, and cook for a few mins more until thick, piping hot and the mince is cooked.
  3. Heat the grill. Take the pan off the heat and put the tortilla triangles randomly on top. Scatter over the cheese and grill for a few mins until the topping is crisp, taking care that it doesn't burn. Sprinkle with the spring onions and serve.

    This made a great change to beef chilli and I really liked the crispy, cheesey tortillas on the top. Served with rice.

    I have been using this recipe regularly since it appeared in the magazine. I like it because it is the tastiest way I have found of using turkey mince, which is healthy and cheap!

    Can anyone help me? I can't find chipotle paste in my local Tescos (which is a Tescos Extra so would expect to find it there!) This recipe looks great - just need the paste.

    Tasty and simple - quick and easy weekday tea. Love the smokey barbecue flavour of the chipotle paste (as others have said available in the 'speciality ingredients' section of sainsburys)

    Caz. I too spent ages looking for chipotle paste in Tesco Extra. Eventually found it in near the herbs and spices. They have a range of pastes called ingredients with silver lids. its in quite a small jar. Good luck!

    Fantastic dish, great reaction from our American friends who came to stay! They loved it! Added a chilli and garlic too for additional depth of flavour. Served with flour tortilla dry fried in a pan for better taste. Fabulous 5 stars

    I don't know whether I got a bad batch of chipotle paste, but I wasn't at all impressed with the turkey chilli: made in accordance with the recipe, it tasted of nothing other than tomatoes. With the addition of another two tbsp of chipotle paste, some cayenne pepper, thyme and lots of seasoning, it's not too bad, but I'm still not sure I'd bother with the recipe again. The cheesy tortilla topping is nice, though, and I'll probably use that on my usual chilli recipe in future.

    I found this a brilliant recipe. I used organic minced beef. Delicious. Very quick to cook and served it with garlic bread. Will be great as part of a buffet for a crowd along with Enchilladas etc.
